Green Salad with Oil and Vinegar Dressing

This ultra simple green salad recipe starts with fresh, crisp greens and finishes with a light vinaigrette of olive oil, sherry wine vinegar and Dijon mustard. It was adapted from Green Salad with Oil and Vinegar Dressing on Epicurious.com.

Ingredients

2 tsp sherry vinegar
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1/2 tsp Dijon mustard
1 small clove garlic, peeled and minced
1/4 cup extra-virgin olive oil
1 head red leaf lettuce
2 Tbl sliced almonds

Method

  1. Lightly toast sliced almonds.
  2. Let cool.
  3. Place the vinegar, salt, pepper, mustard, and garlic in a bowl.
  4. Whisk until blended.
  5. Using hand blender, slowly add olive oil until the dressing is emulsified.
  6. Toss dressing with greens until well-coated.
  7. Serve immediately.
