Green Salad with Oil and Vinegar Dressing
This ultra simple green salad recipe starts with fresh, crisp greens and finishes with a light vinaigrette of olive oil, sherry wine vinegar and Dijon mustard. It was adapted from Green Salad with Oil and Vinegar Dressing on Epicurious.com.
2 tsp sherry vinegar
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1/2 tsp Dijon mustard
1 small clove garlic, peeled and minced
1/4 cup extra-virgin olive oil
1 head red leaf lettuce
2 Tbl sliced almonds
- Lightly toast sliced almonds.
- Let cool.
- Place the vinegar, salt, pepper, mustard, and garlic in a bowl.
- Whisk until blended.
- Using hand blender, slowly add olive oil until the dressing is emulsified.
- Toss dressing with greens until well-coated.
- Serve immediately.
