Simple Celery Salad with Parmesan Cheese
I discovered this celery salad recipe in a pinch one afternoon, when the only fresh vegetable on hand was a bag of celery. The recipe didn’t sound very impressive, but I decided to give it a go anyway. Now each time I make it I’m surprised how interesting it is. It’s unusual in its simplicity, and very crunchy. Adapted from the Real Simple website.
Ingredients
7 celery stalks, sliced thin
2 Tbl red wine vinegar
3 Tbl olive oil
2 Tbl grated Parmesan
1/2 teaspoon fresh lemon juice
1 chopped garlic clove
salt
pepper
Method
- Combine all ingredients.
- Serve at room temperature.
