I have family members who are gluten free and dairy free and I like to cook for them. However, it can be challenging to find a good gluten free dairy free cookie recipe. Consequently, when I found this one, I just had to try it.

Certainly, there are plenty of gluten free recipes out there, but they often use obscure and expensive ingredients. And even then, the final product often doesn’t taste great and the texture can be unsatisfying. This one, however, is made with ingredients most people have on hand: peanut butter, sugar, baking soda, vanilla extract, and an egg. Most of all, it’s simple to prepare and it’s so good, everyone will want some. Furthermore, with this recipe, everyone can share. You don’t have to make something special for the dairy free gluten free person and they can feel like part of the group again.

The original gluten free dairy free cookie recipe on the TastesLovely.com website recommends using smooth peanut butter. I’ve made these cookies several times and have used smooth peanut butter, chunky and even a combination of both, whatever I had on hand, and they all worked and tasted great.

Ingredients

1 cup peanut butter
1/2 cup (100 grams) granulated white sugar
1/2 cup (100 grams) brown sugar
1 tsp baking soda
1 tsp vanilla extract
1 egg

Method

  1. Preheat oven to 350°F .
  2. Line 2 cookie sheets with parchment paper.
  3. Stir all ingredients to combine.
  4. Scoop out the dough, approximately 31 grams each.
  5. Make cross hatches on top of the dough using a fork.
  6. Bake for 10 minutes, until edges are set and centers slightly puffed up.
  7. Cool on the cookie sheet for 5 minutes.

This recipe for gluten free dairy free cookies makes about 18 cookies.
Approx 100 calories each.
